Cream of Potato Soup
An easy, inexpensive, and hearty meal.
The recipe is basic but tasty!

1 med. onion - chopped
2 Tbls. butter OR margarine
4 med. potatoes - peeled, diced
1 cup chicken broth
1/4 cup chopped fresh parsley OR 2 Tbls. dried parsley
1/4 tsp. ground thyme
1/4 tsp. celery seed (see Notes, below)
salt and pepper - to taste
1 1/2 cups milk mixed with 2 Tbls. all-purpose flour

-In a 2-quart saucepan over medium-high heat, cook onions in butter until soft.
-Add potatoes, chicken broth, parsley, thyme, celery seed, salt, and pepper to saucepan; simmer for 15 minutes over medium-low heat, stirring occasionally.
-Stir milk/flour mixture into the saucepan.
-Puree half of soup in a blender; return puree to the saucepan.
-Simmer soup, stirring often, until thickened.

Notes: No celery seed? Use celery salt and omit or reduce added salt.

  • This was my first attempt at potato soup. I added chopped celery and a chopped carrot, and some cooked bacon. Using the blender to puree some, made it great. I should have left out the bacon though.

  • I modified the recipe out of necessity. I was out of chicken broth. I used Bean Bacon soup with three cans of water. I also added 3 stalks of celery. The blender was the secret to truly creamy soup. We loved it.

  • This recipe is great. I substituted vegetable broth for the chicken broth for a vegetarian, and I thought that actually tastes better.

  • This is a great tasting potato soup and since I was in such a hurry to get this to my company table and not use any more utensils than I had to, I added some potato flakes to thicken it and it was wonderful!

  • I HAVE ALWAYS LOVED CREAM OF BROCCOLI SOUP AND CREAM OF POTATOE SOUP, BUT NEVER ATTEMPTED TO MAKE IT. WELL I FOUND YOUR SITE AND MADE A DOUBLE BATCH OF BOTH AND THEY WERE BOTH GONE THE SAME DAY!! THEY WERE FABULOUS!!!

  • Waaay too much parsley, in my humble opinion. I found it overpowers the flavor of the potato.

  • I used this recipe as a base for what I call Chicken Pot Pie Stew. I added chicken, carrots, corn and peas to the recipe wow! was it fabulous! I made homemade biscuits. We put a biscuit in a bowl and topped it with this soup. It was chicken pot pie in a bowl!! I got the idea from a restaurant called Sweet Tomatoes. Thanks!!

  • Your Cream Of Potato soup is fantastic. It Tastes as good as I have gotten at Bennigan's, like them I also added a couple of teaspoons of shredded Cheddar Cheese on top of each serving, it is a great enhancer to the taste of the soup.

  • Delicious! My family likes it with or without the thyme and celery seed. The first night I didn[t have these two ingredients. The very next day I added more potatoes to the soup and it was eaten with the family saying "where's more soup?" I made it again, this time with the thyme and celery seed and it was just as big a hit! What a soup! Thank you.
