-In a blender, combine broth, cornstarch, and sage.
-In the top pan of a double boiler over medium heat,
combine broth mixture with soups. Mix well.
-When heated through, stir in cheese and heat until
melted.
-Pour into oven-proof bowls.
-Broil in oven until tops are lightly browned.
Notes: Use soup within 3 days; do not freeze.
It seems as though many grocery stores have stopped carrying Campbell's
Cream of Onion Soup. It is available here in Ohio, but if it's not available
in your area, I have yet to find a suitable substitution.

While
this is not the actual recipe, it is a very nice
imitation. The closest recipe is in Top Secret
Recipes, 1st Ed. Also, Outback's policy is not to
disclose any recipes or even ingredients.
As a
former Outback employee we were privy to
ingredient list but not amounts or recipes. sage
gives this soup ( and their potato soup) it's
unique flavor. Celery is not an ingredient. After
working at Outback for abysmal wages, I vowed to
never put another dime in their pocket) I am
happy to see your recipes because I miss their
food. Thanks for a great web site. Sally. PS All
of their soups and bread come in frozen from some
corporate warehouse.
I love
this soup. My husband and I went there one night
and instead of the salad I ordered this soup. It
was great!! They would not give me the recipe,
but I found it on your site and it taste just as
good. I did not have any cream of celery soup,
but we think it taste just as good. Thanks for
the recipe and I will be making it plenty more
times.
