Loaded Baked Potato Soup
Creamy potato cheese soup with tons of flavor and all
your favorite baked potato toppings for a wonderful texture.

Serves: 2-4

2 cups chicken broth
3 med. potatoes - peeled, cubed
2 green onions - trimmed, sliced
1/2 rib celery - minced
1/4 med. carrot - grated
2 tsp. distilled white vinegar
1 tsp. salt
1 1/2 cups milk mixed with 2 Tbls. all-purpose flour
1/4 cup shredded cheddar cheese
1/4 cup shredded Monterey Jack cheese
2-6 strips cooked bacon - crumbled

Loaded Baked Potato Soup Mix

-Bring first 7 ingredients to boil in a saucepan over medium-high heat. Cover and simmer over medium-low heat for 20 minutes, stirring occasionally.
-Whisk the milk/flour mixture into the soup, then stir in cheese and bacon.
-Simmer, uncovered, 5-8 minutes, or until thick, stirring constantly.

Make It A Meal: Serve with Cheddar Biscuits like Red Lobster's.

  • Don't be scared by the vinegar in the recipe. Just follow the directions and it will be wonderful!!!

  • Me and my Family really like that recipe. We make it as often as possible. I also changed it into a Clam Chowder, leaving the cheese and the bacon out and used a can of boiled Baby Clams (using the juice from that can) instead. It turned out delicious. My kids wanted seconds and thirds.

  • My family and I love this soup. It's filling and has loads of flavor. I don't add the optional carrot. I like the flavor that the vinegar adds. I always have extra crumbled bacon, grated cheese and green onion to sprinkle over the bowl of soup. It makes for a nice presentation and adds even more flavor and texture.

  • this is a great recipe. i didn't add any celery or carrots and i used vegetable broth and soy milk as alternatives. i did add the cheese. VERY filling. very tasty.

  • I love this recipe. I have tried so many potato soup recipes trying to get it to taste just right this is perfect. I add about 2 tbsp of sour cream in the last five minutes though. Also I top it with a dollop of sour cream and shredded cheese.

  • I had to vary this a bit; left out carrot and celery, also only had cheddar, so I put in a half cup of cheddar and about a half cup of cubed velveeta. It was delicious! We love it with bacon crumbles on top and a dollop of sour cream for garnish. Thanks!

  • Made this soup for the first time. Everyone thought is was very good. I also wondered about the vinegar, and didn't have white, but substituted apple cider vinegar but used a little less than called for. Turned out fine.

  • I loved this soup. I always add balsamic vinegar or worcestershire sauce to my soups for tang. People are surprised by it but once they taste it they become believers.

  • I made this soup and it was awesome, it's just like Panera Breads- but even better. I did sub regular onion (finely minced) for the green one's that it called for. It was soooo good, my whole family loved it. In fact, I'm making it again next week!!!
