Potato Pancakes (Latkes)

Serves: 4

1 cup all-purpose flour
1 cup whole milk
4 eggs
2 Tbls. granulated sugar
1 Tbls. minced onion
1 Tbls. parsley flakes
1/2 tsp. salt
1/4 tsp. baking powder
4 med. potatoes - shredded
2 Tbls. all-purpose flour

-Beat flour, milk, eggs, sugar, onion, parsley, salt, and baking powder until smooth.
-Stir potatoes and flour into mixture.
-Fry 1/4 cup at a time in skillet for 1 1/2 - 2 minutes per side.

Notes: Serve with butter and salt and pepper.

Make It A Meal: Serve along side Pork Chops with Maple Bacon and Cheese
