Potato Pancakes

Serves : 4
Prep. Time : 0:20

1 cup flour
1 cup whole milk
4 eggs
2 Tbls. sugar
1 Tbls. minced onion
1 Tbls. parsley, freeze-dried
1/2 tsp. salt
1/4 tsp. baking powder
4 med. potatoes - shredded
2 Tbls. flour

-Beat flour, milk, eggs, sugar, onion, parsley, salt, and baking powder until smooth.
-Stir potatoes and flour into mixture.
-Fry 1/4 C. at a time in skillet for 1 1/2-2 minutes per side.

NOTES : Serve with butter and salt and pepper.
