Mama's Homemade Pie Crust

Yield: (3) 8" or (2) 9" pie crusts

3 cups all-purpose flour
1 cup shortening
1 egg - beaten
1/4 cup cold water
1 Tbls. distilled white vinegar
1/2 tsp. salt

-Cut shortening into flour until mixture resembles fine crumbs.
-In separate bowl, combine remaining ingredients.
-Mix egg mixture into flour and shortening; add more flour if sticky.
-Form dough into 2 or 3 equal-sized balls.
-Place a dough ball between two pieces of wax paper and roll out into a circle, rolling from the center out.

Notes: I make up the pie dough ahead of time. I roll dough out between wax paper and place in large flat Tupperware® container and throw in freezer. I remove dough as needed.
