Pierogi Casserole

Serves: 6-8
Prep. Time:

10 med. potatoes - boiled
10 oz. grated cheddar cheese
8 oz. cream cheese - softened
1 cup real butter
4 med. onions - minced
salt and pepper - to taste
1 lb. box lasagna noodles - cooked, drained

Ingredients at Firehouse Pantry

-Beat together potatoes, cheddar, and cream cheese until cheese is melted and no potato lumps remain.
-Sauté onions in butter until soft.
-Stir 1/3 of the onions into the potato mixture; salt and pepper to taste.
-Place a layer of lasagna noodles in the bottom of a greased 9" X 13" X 2" pan.
-Spread 1/3 of the potato mixture over the noodles.
-Repeat layers, ending with noodles.
-Pour remaining onions over all.
-Bake, covered, in a 350 degree oven until heated through, about 30 minutes.

Make It A Meal: Serve with Oven Baked Pork Chops and Peas 'N Mushrooms

  • I have tried this and it really is good. To save time you can make instant potatoes too. Just season them to your taste.
