Mashed Potatoes à la Southern of Sweden

2 1/2 lbs. potatoes - peeled, sliced
1/2 - 1 cup milk - low-fat okay
1 tsp. salt
1 Tbls. granulated sugar - optional
1 tsp. black pepper - optional
1 Tbls. butter OR margarine

Ingredients at Firehouse Pantry


-Boil sliced potatoes in salt water until tender.
-Mash the boiled potato slices thoroughly with an electric mixer. There should be as few lumps as possible.
-Add butter and mix together.
-Add milk an mix together until it is a smooth batter.
-Add sugar, salt and pepper; stir.

Notes: This is called Potatismos in Sweden. I use salt and sugar, and exclude the pepper. This is the traditional way. My mother-in-law use white pepper.

Make It A Meal: This completes a traditional Swedish meal with meatballs and cranberry jam
