Italian Style
Microwave Zucchini

Serves: 4

6 sm. zucchini
salt - to top
2 Tbls. Italian salad dressing
1 dash Italian seasoning
grated Parmesan cheese - to top
paprika - to top

-Cut zucchini in halves crosswise, then lengthwise into fourths.
-Place zucchini in 1 1/2 qt. casserole dish and sprinkle with salt, then salad dressing, then Italian seasonings.
-Cover tightly and microwave on high for 3 minutes. Stir.
-Cover and microwave until tender, about 2-3 minutes longer.
-Sprinkle with Parmesan and paprika.

Make It A Meal: Serve with Italian Enchiladas and Garlic Rolls

Needed basic recipe for the microwave. I used balsamic vinegar and hot red pepper olive oil mixed in a bowl with Mrs. Dash extra spicy seasoning. Microwaved per instructions. It was great and helped create another way to enjoy lunch. Some I ate as prepared, the balance added to my salad.
