Shepherd's Pie

1 Lb. ground beef OR lamb
1 lrg. onion - chopped
16 oz. can green beans - drained
10 oz. can condensed tomato soup
2 cups prepared mashed potatoes Click here for the recipe!

-Brown beef/lamb with onion; drain.
-Stir green beans and tomato soup into meat; add a small amount of water if desired; heat through.
-Spoon mixture into a greased casserole dish; spoon mashed potatoes evenly over top.
-Bake in a 375 degree oven for 30 minutes, or until top is golden brown.

Notes: You may add a sprinkling of Parmesan cheese on top, if desired.

  • This is one of my family's favorite recipes. I usually add a can of drained corn instead of the green beans.
  • this is not a TRUE shepherds pie, no green beans or tomato paste in real thing, only ground beef or lamb and carrots and onions, and NO parmesan on the top!! Just mashed potatoes.
