Skip's One Pan Breakfast

Serves: 3-4

1 lb. frozen link sausages - cut in 1/4" pieces
1 lg. russet potato - peeled, diced
1 sm. onion - minced
6 eggs - beaten
salt and pepper - to taste

-Heat a large skillet on high, add sausage, cook until it renders the grease.
-Add potatoes and onions, cook until potatoes are tender and browned.
-Add eggs to skillet and mix well.
-Cook until eggs are scrambled, season to taste with salt and pepper.

Notes: I have been cooking this breakfast for 30 years, with great results every time. Cooking time can be reduced 5-6 minutes by using store bought frozen hash browns.

  • Have you tried this one adding a little grated cheese??? and maybe with bulk sausage instead of links?? I have been making it that way for years and its a winner every time .... I also use polish sausage and bacon... sheeze I guess anything goes huh LOL
