Spaghetti Pie

3/4 cup cooked spaghetti noodles
1/3 cup grated Parmesan cheese - low-fat okay
2 eggs - beaten
2 Tbls. melted butter OR margarine
1 Tbls. parsley flakes
1/2 tsp. salt
1 cup ricotta cheese OR cottage cheese - low-fat okay
1/3 cup grated Parmesan cheese - low-fat okay
1/4 tsp. salt
1/4 tsp. Italian seasoning
1 dash black pepper
2 cups
spaghetti sauce
1/4 cup shredded mozzarella cheese - low fat okay

-Combine noodles, Parmesan, eggs, butter, parsley, and salt in pie plate.
-Form around sides and bottom of pie plate to form a crust.
-Combine ricotta, Parmesan, salt, Italian seasoning, and pepper.
-Spread over spaghetti noodles.
-Pour sauce over cheese mixture.
-Cover edges of noodles with aluminum foil and bake in a 350 degree oven for 25 minutes.
-Sprinkle cheese on top of pie.
-Return pie to oven for 5 minutes to melt cheese.
-Let pie sit for 5 minutes before cutting.

Notes: This is a great way to get rid of leftovers. It can even be prepared, up to the point of being baked, then frozen for later use.

Make It A Meal: Serve with Italian Minestrone Soup and Garlic Rolls.

  • I have this recipe in my cookbook, listed under "Favorites". I prepare this all the time for my family. It is simple and although seems to have a similarity to lasagna, it does seem to taste different. We love it!!
