Grilled Key Lime Chicken

Serves: 3-9
Prep. Time:
8:30

1 cup key lime juice - preferably fresh
1 Tbls. honey
3/4 cup water
1/2 tsp. black pepper
1/2 tsp. ground thyme
2 Tbls. vegetable oil
1 Tbls. fresh ginger root - peeled, grated
1-3 lbs. boned, skinned chicken breasts


-Combine all ingredients, except chicken, in blender or food processor and process until combined well.
-Combine chicken and lime mixture in a plastic zipper bag and allow to marinate in the refrigerator overnight.
-Shake excess marinade off of chicken and grill over high heat, turning once, until cooked through.

Notes: Garnish with fresh cilantro and lime slices.
