Pavlova

6 egg whites
1/4 tsp. cream of tartar
1 cup + 2 Tbls. granulated sugar
1 tsp. corn flour
2 tsp. white vinegar
1 tsp. vanilla extract
toppings of your choice (see Notes, below)

-Beat the egg whites and cream of tartar with an electric mixer until they form a dense white foam and stiff peaks.
-Sift the sugar and corn flour together on top of the egg mixture.
-Pour the vinegar and vanilla down the sides of the bowl.
-With the electric mixer on low speed, mix all together, being careful not to over mix.
-Line a cookie sheet with parchment paper and spread the mixture onto it, making a 7" - 8" circle.
-Place in the center of a pre-heated 425 degree oven, then immediately turn the temperature down to 250 degrees.
-Bake for 1 1/2 hours, then turn the oven off, open the oven door, and allow to cool thoroughly before removing.
-Serve with your choice of toppings (see Notes, below).

Notes: Conventional toppings are whipped cream, sliced strawberries, and peeled and sliced kiwi. You may also try peaches, passion fruit, oranges, apples, bananas, apricots, mango & blueberry, raspberry, chocolate mousse, pecans, white chocolate, and cinnamon.
