-With an electric mixer, beat all ingredients together
until smooth, being careful not to over mix.
-Fill greased large muffin tins or mini loaf pans 3/4
full with batter.
-Bake in 350 degree oven for 20 minutes, or until
toothpick inserted in center comes out clean.

I must say that
this recipe is a gem! I cannot believe how moist
this bread comes out! Truthfully I have had so
many requests from people to bake this bread from
work, family and my husband. Everyone loves it!
You could also easily make it pumpkin or
blueberry bread by changes the flavor of some of
the ingredients. I am now know for my fabulous
banana bread! Thank you Robbie!
Thanks for the
great recipe. My daughter, Emily won champion at
our county 4-H fair and she received a special
merit at the Indiana state fair.
I
couldn't find banana cake mix, so I used a butter pecan mix instead
- fabulous!! The best banana nut muffins I have ever had, even
better than the Otis Spunkmeyers. So moist and flavorful, I can't
wait to make them again. Thank you!
