Miso Soup

Serves: 4

2 tsp. dashi bouillon granules - see Notes, below
4 cups water
3 Tbls. miso paste - see Notes, below
4 oz. firm tofu - diced, low-fat okay
4 green onions - sliced thin lengthwise, cut into 1" pieces


-Bring dashi granules and water to a boil.
-Whisk miso paste into broth, then stir in tofu and green onions.
-Simmer over low heat for 10 minutes.

Notes: Dashi is a stock made from dried fish (bonito) and seaweed. Miso is a fermented soybean paste which comes in different varieties, from white to red. Both of these items can be purchased at an Asian food store or in many larger supermarket chains in the ethnic food aisle.
