Miso Soup

Serves : 4

2 tsp. dashi bouillon granules (see Notes below)
4 cups water
3 Tbls. miso paste (see Notes below)
4 oz. firm tofu - diced, low-fat okay
4 green onions - sliced thin lengthwise, cut into 1" long pieces

-Bring dashi granules and water to a boil.
-Whisk miso paste into broth, then stir in tofu and green onions.
-Simmer over low heat for 10 minutes.

Notes : Dashi is a stock made from dried fish (bonito) and seaweed. Miso is a fermented soybean paste which comes in different varieties, from white to red. Both of these items can be purchased at an Asian food store.
