Microwave Peanut Brittle

Serves: 12
Prep. Time:

1 cup granulated sugar
1 cup cocktail peanuts
1/2 cup light corn syrup
1 tsp. real butter
1 tsp. vanilla extract
1 tsp. baking soda

Ingredients at Firehouse Pantry

-Stir together peanuts, sugar, and corn syrup in a microwave-safe glass baking dish.
-Microwave on 100% power for 3 minutes and 15 seconds.
-Microwave on 100% power for an additional 3 minutes and 15 seconds.
-Stir in butter and vanilla.
-Microwave on 100% power for 2 minutes.
-Quickly stir in baking soda.
-Pour onto an un-greased cookie sheet to 1/8" thick, spreading with a spoon if necessary.
-Cool before breaking into small pieces.
