Low-Fat Garlic Chicken
with Bow-Tie Pasta

1 lb. boned, skinned chicken breasts - sliced lengthwise
2 Tbls. olive oil - divided
1 tsp. salt
8 cloves garlic - minced
1/2 lb. fresh mushrooms - scrubbed clean, quartered
1/2 cup sliced green onions
14.5 oz. can diced tomatoes - un-drained
1/2 cup chicken broth
1 tsp. corn starch mixed with 1 tsp. cold water
1/2 tsp. red pepper flakes
1 tsp. minced fresh basil OR 1/2 tsp. dried basil
2 cups cooked bow-tie pasta
1/4 cup chopped fresh parsley OR cilantro

-In a large skillet over medium-high heat, brown chicken in 1 Tbls. oil for 5 minutes on each side, or until juices run clear; sprinkle with salt; remove from skillet and keep warm.
-In the skillet, sauté garlic in remaining 1 Tbls. oil until golden.
-Add mushrooms and green onions to skillet; sauté for 2 minutes.
-Add tomatoes, broth, corn starch mixture, red pepper, and basil to skillet; heat to boiling; reduce heat to medium-low and simmer for 5 minutes; remove from heat.
-Fold cooked chicken, pasta, and parsley/cilantro into the skillet.

Notes: The bow tie pasta in this recipe can be substituted with rotini, rigatoni, penne, mostaccioli, or radiatore.
