Easy Carrot Cake

Serves: 18

1 1/2 cups vegetable oil
2 cups granulated sugar
3 eggs
2 tsp. vanilla
2 cups all-purpose flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1 can crushed pineapple - drained
1/2 cup raisins
1 cup chopped walnuts
1 jar toddler stage carrot baby food

Ingredients at Firehouse Pantry

-In a large bowl, combine oil, sugar, eggs, and vanilla.
-Sift together flour, cinnamon, baking soda, and salt.
-Add dry ingredients to wet mixture; mix well.
-Stir in remaining ingredients.
-Pour into greased and floured 13" X 9" baking pan.
-Bake in 350 degree oven for 50-60 minutes, until center of cake is firm to the touch.
-Cool in pan; frost as desired.
