Chili Con Queso Dip
Smooth, creamy Mexican white cheese dip.

1 cup shredded Asadero cheese - see Notes, below
4 oz. can jalapeno OR poblano peppers - drained, seeded, minced
1/4 cup half and half cream
2 Tbls. minced onion
2 tsp. ground cumin
1/2 tsp. salt

-Heat all ingredients over low heat, stirring constantly, until the cheese has melted.
-Serve warm with corn tortilla chips.

Notes: If this is made with poblano peppers, it's called queso con rajas de chile. If you can't find Asadero cheese, you may substitute with Provolone.
