Beef & Barley Stroganoff

Serves: 4

1 Tbls. olive oil
1 lb. stewing beef - cubed
1/2 cup chopped onion
1 clove garlic - minced
1 tsp. paprika
1 tsp. salt
1/4 tsp. black pepper
2 1/2 cups beef broth
2 cups sliced fresh mushrooms
1/2 cup barley
2 Tbls. ketchup
1/2 cup sour cream - low-fat okay

-Brown beef in oil in large saucepan.
-Stir in onion, garlic, paprika, salt, and pepper and cook for 3 minutes.
-Stir in broth, mushrooms, barley, and ketchup.
-Cover and simmer over low heat for 1 hour.
-Remove from heat and stir in sour cream.

Notes: Serve over cooked and buttered egg noodles.

Make It A Meal: Serve with Corn Salad.
