Beef
& Barley Stroganoff

1 Tbls. olive oil
1 Lb. stewing beef - cubed
1/2 cup chopped onion
1 clove garlic - minced
1 tsp. paprika
1 tsp. salt
1/4 tsp. black pepper
1 1/2 cups beef broth
1 cup water
2 cups sliced fresh mushrooms
1/2 cup barley
2 Tbls. catsup
1/2 cup sour cream - lowfat okay
2 cups egg noodles - prepared as directed
-Brown beef in oil
with onion, garlic, paprika, salt, and pepper in large
sauce pan.
-Add broth, water, mushrooms, barley, and catsup.
-Cover and simmer over low heat for 1 hour. Remove from
heat.
-Stir sour cream into sauce pan.
-Serve over noodles.
