Twice Baked Potatoes

Serves: 4-8

4 lrg. baking potatoes - baked
1/2 cup sour cream OR cream cheese - low-fat okay
1/2 cup butter OR margarine - softened, low-fat okay
1/2 cup shredded cheddar cheese - low-fat okay
1/4 cup cooked, crumbled bacon - optional
1/4 cup minced celery - optional
1/2 tsp. salt
1/4 tsp. black pepper

-Cut potatoes in half lengthwise and scoop potato out of the skins and into a bowl.
-Add remaining ingredients to bowl and beat until fluffy.
-Spoon the mixture back into the potato skins; place the filled skins on a baking sheet.
-Bake in a 400 degree oven for 20 minutes.
