2 eggs
20 oz. can crushed pineapple in juice
2 cups all-purpose flour
2 cups granulated sugar
1 cup chopped walnuts
2 tsp. baking soda
1 tsp. vanilla extract
1 1/2 lbs. cream cheese - softened, low-fat okay
1 1/2 cups powdered sugar
1/2 cup butter OR margarine

-Beat together eggs, pineapple, flour, sugar, walnuts, baking soda, and vanilla with a spoon.
-Pour into a greased 13" X 9" X 2" baking dish.
-Bake in a 350 degree oven for 25-30 minutes.
-Beat together cream cheese, butter, and powdered sugar; spread over warm cake.

  • I made the Pineapple Sheet Cake. It is so moist and good. Brought my neighbor some of it. She asked for a copy and she does not have a computer or printer so I just copied her one. Thank you for such moist and good cake.

  • I just wanted to tell you that this recipe is awesome! I had some cinnamon sugar graham crackers in the house, and crumbled up a few of them to put on top of the cake. Since it's such a sweet cake though, I didn't use all of the topping it called for-I cut that part of the recipe in half and put a few pineapples on top. Thanks!
