2 cups granulated sugar
1 cup buttermilk
1 tsp. baking soda
2 cups pecan halves
1 Tbls. real butter
1 tsp. vanilla extract

-In a large pot, stir together sugar, buttermilk, and baking soda until sugar is dissolved.
-Boil mixture over medium-low heat until mixture reaches 234 degrees (soft ball stage), stirring constantly.
-Remove from the heat and stir in pecans, butter, and vanilla.
-Beat mixture briskly until glossy and begins to thicken (may take several minutes to thicken).
-Quickly spoon mixture, 1 Tbls. to 1/4 cup at a time, onto greased waxed paper.
-Allow to cool completely before removing from wax paper.

Notes: These make great gifts presented in decorative tins.

(1) Visitor Comment:

  • Made these for a Christmas party. They were very good, but before you pour them out, you have to stir it for a while. My first few were pretty runny and flat, but as the stuff in the pan cooled, those last ones turned out better.
