Ambrosia Salad

3.4 oz. box instant pistachio pudding
8 oz. whipped cream topping - low-fat okay
1/2 cup milk
20 oz. can crushed pineapple
15 oz. can apricots OR peaches - drained, diced
11 oz. can mandarin oranges - drained
2 cups miniature marshmallows
1/2 cup shredded coconut
1/2 cup halved maraschino cherries

-Beat together pudding mix, whipped cream, and milk.
-Fold in remaining ingredients.
-Refrigerate for at least 1 hour before serving.

This is the best recipe for ambrosia ever. An old friend of my mothers used to make it like this with the pistachio pudding and I have been searching for the recipe. It is just as heavenly as I remembered. Thank you! This kicks all other ambrosia recipes plumb out of the water!
