7-Up® Cake
A.K.A. Leadbutt Cake
Dense, lemony pound cake baked in a tube or bundt pan.

Prep. Time: 1:45

1 cup real butter
1/2 cup vegetable shortening
5 eggs
2 cups granulated sugar
3 cups all-purpose flour
1 Tbls. lemon extract
7 oz. 7-Up®
soda (a little less than a cup)

-Cream butter and shortening together.
-Add eggs, one at a time, beating after each addition.
-Sift flour and sugar together and beat into wet mixture.
-Beat in lemon extract and 7-Up®.
-Pour into greased and floured tube (angel food cake) or bundt pan.
-Bake in a 350 degree oven for 90 minutes.

  • I tried this recipe and found the cake to be a little bland. I used a a tube pan and had a real nice crunchy top.
