Low-Fat Soft Ginger

2 1/2 cups all-purpose flour
2 tsp. ground ginger
1 1/2 tsp. pumpkin pie spice
1 1/2 tsp. baking soda
1 tsp. salt
1 cup packed dark brown sugar
3/4 cup granulated sugar
1/4 cup molasses
1/3 cup butter-flavored shortening
-Combine flour, ginger, pumpkin
pie spice, baking soda, and salt; set aside.
-Cream together sugars, molasses, shortening, and egg until smooth.
-Slowly beat dry mixture into wet mixture.
-Roll dough, about 1 1/2 teaspoons at a time, into balls and press to
1/4" thick on an ungreased baking sheet.
-Bake in a 350 degree oven for 10-12 minutes, until edges begin to
