Spinach Dressing

Serves: 6-8
1 loaf sourdough
French bread - day old is best
milk - to cover
1 pkg. frozen spinach
1 pkg. Jimmy Dean®
sausage - mild OR hot
1 sm. yellow onion - diced
4 cloves garlic - crushed
1 Tbls. butter
1 cup shredded Monterey Jack cheese
(2) 7oz. cans button OR sliced mushrooms - drained
3 egg yolks
-Cut off ends of bread and tear remaining
loaf into pieces.
-Put torn bread into a bowl pour over just enough milk to
cover. Soak for 5 minutes.
-Strain out milk, squeeze bread dry, and set aside.
-Cook spinach per directions; cool and squeeze dry; set
aside.
-In a skillet, fry sausage,crumbling as you cook it.
Drain off all grease and set aside.
-Saute onion and garlic in butter until onion becomes
translucent.
-Add spinach and sausage to onions and garlic, mix well,
and set aside to cool.
-Combine bread and spinach mixture with cheese.
-Add mushrooms and egg yolks.
-Mix all ingredients together well and pour into a
12" X 9" X 4" casserole dish sprayed with
cooking oil.
-Bake covered in 350 degree oven for 35-45 minutes, or
until heated through.
NOTES: Serve as a side dish with holiday turkey.
Do not put dressing into turkey as it will turn the
turkey green.
