Sicilian Pizza Crust

active dry yeast
4 cups all-purpose flour - divided
1/2 cup 110 degree water
1 tsp. salt
1 cup cool water
sauce, cheese, and toppings of your choice
-Combine yeast, 1/2
cup flour, and warm water in a bowl; cover with plastic
wrap; allow to rise for 15 minutes. Stir to deflate.
-In a separate bowl, combine 2 cups flour, salt, and cool
water.
-Combine the two mixtures in a bowl with the remaining
flour.
-Turn dough onto a floured surface and knead for 15
minutes.
-Place dough in a bowl lightly dusted with flour; cover
with plastic wrap; allow to rise until doubled in size,
about 1 1/2 hours.
-Punch down dough and roll out on a lightly floured
surface.
-Place dough in a lightly oiled 17 1/2" X 11
1/2" X 3/4" pan and push to stretch out evenly,
leaving a lip against sides of pan. Allow to rest for 15
minutes.
-Spread sauce over crust and top with cheese and desired
toppings.
-Bake in a 450 degree oven for 25 minutes, or until crust
is golden brown.
NOTES : After
allowing the dough to rise, you may place it in a plastic
zipper bag and refrigerate. When ready to use, proceed
with instructions.
