Cornish Hen Dinner for Two

2 Cornish game hens - rinsed, patted dry with paper towels
approx. 1 Tbls. poultry seasoning mix (see Notes, below)
1 lb. bag frozen whole green beans
6 oz. box dry stuffing mix - prepared as directed
2 Tbls. all-purpose flour
2/3 cup chicken broth

-Slide your finger between the skin and meat of the hen, separating them and making pockets. There should be 4 total pockets, one on each side of the bird, on the breast and back.
-Sprinkle 1/4 tsp. seasoning into each pocket and use your finger to spread the seasoning evenly throughout each cavity.
-Rub 1/4 tsp. seasoning on the inside of hen.
-Sprinkle additional seasoning on the outside of the bird and rub in.
-Stuff the cavity of hen with 1/2 of the prepared stuffing.
-Repeat with the other hen.
-Place hens, breast side down, in a plastic oven roasting bag, which is placed on a cookie sheet.
-Spread green beans around hens in the roasting bag.
-Tie bag closed with supplied tie and poke holes in top of bag to vent.
-Bake in a 350 degree oven for 1 hour, 20 minutes.
-Cut bag open and spoon 2 Tbls. of the fatty dripping from bag into a small saucepan.
-Stir flour into drippings and heat to bubbling; slowly stir in chicken broth; simmer, stirring occasionally, until thickened.
-Place each hen on a separate plate; with a fork, scoop some of the stuffing out of the hens, making it appear to be spilling out of the cavity; spread green beans around hens; serve with gravy on the side or drizzled over the hen.

Notes: I use either McCormick® Salt & Spice OR Jane's Crazy Mixed Up Salt® for the poultry seasoning.
