1/2 cup raisins - optional
1 tsp. vanilla extract
1/2 cup light cream - optional

-Bring milk, sugar, and rice to a simmer over medium heat; reduce heat
to low; cook, uncovered, stirring occasionally, for 1 hour, or until rice is
soft.
-Add raisins; increase heat to medium; cook, stirring
constantly, for 20 minutes, or until rice has absorbed
most of the milk.
-Remove from heat and stir in vanilla.
-Let sit until room temperature, then refrigerate for 2-3
hours. The pudding will thicken as it chills.
-Immediately before serving, stir in cream.
