Classic Macaroni Salad
Traditional accompaniment to take to a barbeque.

Serves: 16

1 lb. box elbow macaroni - prepared as directed
4 hard-boiled eggs - peeled, coarsely chopped
3 ribs celery - sliced
1 med. onion - chopped
1/2 cup pimento-stuffed green olives - halved
1/2 cup mayonnaise OR creamy salad dressing - low-fat okay
2 Tbls. milk - low-fat okay
2 Tbls. distilled white vinegar
1 Tbls. granulated sugar
1 tsp. salt

-Fold together all ingredients in large bowl.
-Refrigerate for 1 hour or overnight before serving.

Make It A Meal: Serve with BBQ Ribs and Cole Slaw like Hard Rock Café's®.

  • Next time I’ll try the red chili PEPPER adding 1/2 tsp at a time and see what happens.

  • A little bland for my taste. Perhaps just a touch of dried red chili pepper.

  • I make mine exactly like this, but I use sea shell macaroni, leave out the olives and add a can of tuna...probably more mayonnaise mixture. The shells and the tuna seem to soak it right up.

  • Pack into a plastic container and into the ice chest - this is wonderful for camping trips! Best to let set overnight, and I like the addition of sweet pickles as well.

    This is the BEST “Mac” salad ever! I added sweet pickle relish that gave it a little “kick” for hubby. Once, when I had run out of green olives, I added sweet red pepper and black olives and it was just as good! Thanks for this, it is now a family favorite.

  • I am the worst macaroni salad maker in the world , that is until I found your recipe in the net. this was so simple and I had all the ingredients on hand. I made it in record time and it was delicious even warm. lol.
