Buffalo Chicken Soup

Serves: 4

1 sm. onion - chopped
2 ribs celery - chopped
1/4 cup butter OR margarine
1/4 cup all-purpose flour
3/4 cup milk
3/4 cup chicken broth

2 cups diced, cooked chicken
1/4 - 1/2 cup buffalo wing sauce - to taste
4 oz. process cheese food (Velveeta
®) - cubed, low-fat okay
1/2 tsp. cayenne pepper
1/2 tsp. celery salt
1/2 tsp. garlic salt

-In a 2-quart saucepan over medium-high heat, sauté onions and celery in butter until tender.
-Stir flour into pan; slowly whisk in milk and broth.
-Stir in remaining ingredients and simmer over medium-low heat, stirring occasionally, until the cheese has melted.

  • I made this soup yesterday for my husband's birthday. He loved it!! I did have to alter the original recipe a little. The consistency was too thick for our taste. I added 1.75 cups of milk to thin it out a bit. Thank you for the great recipe. I will be passing it on to my friends!

  • I tried this soup and it was absolutely wonderful!! I also added additional milk to thin just a bit. I would like to add a suggestion: try adding a few crumbles of bleu cheese and a few drops of hot sauce to each bowl. Also, try using a rotisserie chicken from your local grocery store, it saves time-just pick a part, chop and add to the soup-tastes even better : )

  • I tried this recipe earlier this week, and it was so simple, and good. I am making it again tonight, and I have added more chicken broth, than the recipe called for, as it did seem to be a bit too thick... but otherwise it is such a no fail recipe, and so very good.
